A Pat on The Back

Hey Reader-Friends!

This is my pat on the back. For what you may ask?

Well, I will get to that in just a second, but first…

If you haven’t heard I am taking summer classes and they are killing me and one of them happens to be biology. I love it! Caution: Nerd statement up ahead….

Science blows my mind!!! Seriously, it doesn’t only intrigue me-it brings me to worship. I just can’t believe that this gigantic universe, composed of millions of micro-universes, functioning so precisely that everything exists as we know it, is something that just happened. I walk out of bio class every day, thinking: wow, God is freaking cool! Plus, there is so much there in biology. Nobody can know it all in the field, because they are discovering new things everyday. That’s big. Do you get this? Learning is exciting!

Anyway, back to my pat on the back. There is a connection, I promise. And here it is! I have been eating healthier! The blessing and, ironically, curse of paying attention in biology class is knowing what you putting in your body is going to react eithere prostively of neatively (it’s the same thing in English for me, I don’t like knowing proper grammar and being annoyed when people don’t use it!). Last week I went to the produce section  of the grocery store and bought all kinds of goodies (yeah, you can get goodies out of the produce section!) It’s so much easier to eat better when you know what each food is going to do for you. Pinterest will link you up to some great recipes, by the way! And if you’re like me, you can draw your inspiration from those recipes and experiment with what you like. Here are few of my, in the honor of science, “experiments”:

Berry Chicken Salad:

*Spring Mix
* Fresh Spinach
*Strawberries
*Blueberries
*Chopped Grilled Chicken
*Toasted Almond Slivers
* Feta Cheese
(NOM! NOM! NOM!-been putting it on everything lately)
*Balsamic or Raspberry Vinaigrette

Baked Tuna Stuffed Tomatoes
and
Guacamole

*Romano Tomatoes
*Tuna seasoned with
                    -Salt and Pepper
-Basil
                          -Grated Parmesan
                                       -Feta (can’t get enough!)
         -Olive Oil
*Bake at 375 until tomatoes are tender (about 15-20 minutes)

mmmMMM, COOKIE BROWNIES!!!

Okay, that last one is not healthy, but I didn’t touch that little bit of heaven with a single taste bud! (Lie! I did have a few batter licks.) I sent that with my bestie, who was on her way to Cleveland where Jon boy is working on another instructor’s license. See the writing? “Good Luck on MEI (multi-engine instructor) check ride.”

Cooking has been very theruputic for me, and eating healthy makes me feel good about myself. I’m going to miss these things when school once again takes over my life in the fall.

That is truly amazing how excited you get about science! I wish I had that same passion for it :)
I DEFINITELY need to eat healthier! And I really need to get addicted to pinterest, and recipes are one of my main reasons for wanting to pin haha!
